CHOCOLATE CREAM PIES – GIFTS FOR THE POOR ON THANKSGIVING

Strawberry White Chocolate Cream Pie

Ingredients:
For the crust: 100g unsalted butter, 30g caster sugar, 1 egg, 200g low protein flour, 15g-25g water, 2g salt
For the filling: 50g-60g white chocolate, 50ml whipping cream, 20g caster sugar, 2 or 3 droplets vanilla extract
For the topping: 3 boxes strawberries, 200g whipping cream, 20g-40g powdered sugar

Method:
1. Prepare the crust. Soften butter and stir in caster sugar
2. Add egg yolk and mix well
3. Pour in low protein flour and water, knead dough, press and rub gently with your fingers, package it with a plastic wrap and loosen for 15 minutes
4. Spread pinch flour on the chopping board, roll the dough into a round even slice a little larger than the pie pan
5. Lay the slice in the pie pan and trim the edge
6. Poke some holes with a toothpick or a fork on the bottom of the crust
7. Cover the crust with a large baking paper, put heavy stones on the paper, preheat oven to 356F and bake for 15 minutes
8. Remove the stones and baking paper and bake for another 5 minutes under the same temperature (you may brush a layer of egg wash before putting the pie pan into the oven)
9. Let cool
10. Prepare the white chocolate cream filling. Cut white chocolate into cubes and heat over water until melted
11. Add sugar and vanilla extract in whipping cream and bring to a boil with slow fire
12. Pour the hot cream into the white chocolate and stir well
13. Pour the white chocolate/cream liquid into the crust when warm, then let cool and refrigerator for 15 minutes
14. Top with strawberries and squeeze out well whipped cream
15. Decorate with some powdered sugar

Cherry Chocolate Cream Pie

Ingredients:
For the crust: 150g low protein flour, 80g butter, 1 egg yolk, 2 tablespoons water, 80g caster sugar
For the chocolate filling: dark chocolate, 30g caster sugar, 200g whipping cream, 1 teaspoon cake flour, 1 egg yolk

Method:
1. Prepare the crust. Soften butter and stir in sugar and egg yolk
2. Add water per several times and sift in low protein flour, knead dough gently
3. Loosen for 1 hour and roll into a 8 inch pie pan, poke holes on the bottom of the crust
4. Prepare the chocolate filling. Add sugar in whipping cream and bring to a boil.
5. Let cool and pour in dark chocolate particles and mix well
6. Add egg yolk and sift in low protein flour until no particle, pour in the crust and prepare the baking
7. Preheat oven to 338F for 10 minutes, middle layer, bake for 20 minutes (adjust temperature and time depending on your oven)
8. Remove from the oven and let cool for at least 2 or 3 hours. Spread cherries and powdered sugar for dressing
