This so called fiesta wrap is a delicacy mainly serves for students who are in need of nutrition. Ingredients include black beans, lemon juice, quinoa, carrots, red peppers, red onions and more. Utterly design for students who can have an option to select fresh veggies to eat along with.


Fiesta wrap


Ingredients:<serves for 6>

Rinsed black beans 1 1/2 cup
Quinoa 1 cup
Raw carrots 1/3 cup+ 1/1/4 teaspoon
Cheese 1 7/8 ozs
Red raw peppers 3 tablespoons+2 1/2 teaspoons
Fresh onions 3tablespoons+2 1/2 teaspoons
Chili powder 3/4 teaspoon
Lemon juice 1 1/8 teaspoons
Vegetable oil 2 7/8 teaspoons


1. 20 minutes for quinoa to soak in water and drain
2.Add 1/2 cup of water, cook quinoa for 15 minutes until quinoa is soft and tender
3.Let cool for 15 minutes
4.Combine all the ingredients into a bowl, including beans, quinoa, carrots, cheese, peppers, onions, chili powder, cumin and lemon juice, mix well
5.Brush a layer of oil on a sheet pan, spread mixture onto it
6.Preheat oven to 325F, bake for about 15 minutes until the mixture is golden and brown
