Strawberry Jelly Donut Cupcakes

Everyone knows that all children love donuts and they love cupcakes. For this reason why not combine the two? These strawberry jelly donut cupcakes are healthy, delicious and gluten free. They are considerably more nutritious and are a really nice dessert option for those who have kids that cannot consume gluten. They have great texture, are filled with a sweet yet tart strawberry filling and finished with a little natural sweetener. Most importantly making them is easy and you will have some jam leftover to save for another day.

Strawberry Jelly Donut Cupcakes

Ingredients

3 eggs
2 cups fresh strawberries, hulled and chopped
½ cup applesauce, unsweetened
½ cup coconut flour
½ cup grapeseed oil
½ cup agave nectar
½ cup fresh dates, pitted
¼ cup coconut water
2 tablespoons chia seeds
1 tablespoon pure vanilla extract
1 tablespoon arrowroot powder
¼ teaspoon sea salt
¼ teaspoon baking soda
¼ cup coconut water
Lemon zest
Xylitol icing sugar

Directions

About 30 minutes before making the cupcakes prepare your strawberry jam. You also have the option of using a store bought jam. To make a jam of your own:

1. Add coconut water, dates and lemon zest into a blender. Pulse until dates have broken up.

2. Add half of the chopped strawberries into the blender along with the chia seeds.

3. Blend for about 5-10 seconds.

4. Put in remaining strawberries and pulse until they begin to break apart.

5. Jar this jam and place in the fridge for 30 minutes. While in the refrigerator the jam will thicken significantly as a result of the chia seeds.

6. After the 30 minutes add jam in a small bowl with arrowroot powder and stir vigorously to create the jelly filling.

For the cupcakes:

1. Add coconut flour, salt and baking soda into a food processor. Pulse a few times to combine ingredients.

2. Whisk eggs in a small bowl.

3. Add applesauce, grapeseed oil and pure vanilla extract to the eggs. Whisk until well combined.

4. Pour into the food processor and pulse to combine.

5. Leave batter to thicken.

Now that your batter has thickened:

6. Preheat your oven to 350 degrees F.

7. Line a cupcake tin with paper liners.

8. Spoon about 2 heaping tablespoons of batter in each liner.

9. Add 1 tablespoon of the strawberry jelly filling on top of the batter. Try your best to place filling in the middle.

10. Bake for 20-25 minutes. Perform the fork test to ensure cupcakes are fully cooked.

11. Allow cupcakes to cool for 15-20 minutes.

12. Dust each cupcake with xylitol icing sugar and serve.
