Roasted Vegetable Soup with Polenta Croutons
1. 1 head cauliflower, broken into small chunks.
2. 4 small-medium turnips cut into quarters.
3. 4 cloves of garlic, smashed coarsely.
4. 4 baby onion (or 1 small onion), sliced lengthwise
5. 2 small potatoes.
6. 2-3 tablespoons olive oil
7. Salt and pepper
8. 1/2 cup – 1-cup water or veggie stock.
• Preheat the oven to 375F.
• Place all the vegetables on a baking sheet or in a pan in one single layer and drizzle with olive oil.
• Season with salt and pepper.
• Roast until golden brown, about 30-40 minutes. Let cool to room temperature.
• Add about 1/2-cup water or stock and puree in a blender.
• Check if the consistency is to your liking and adjust accordingly.
Now prepare the polenta croutons.
• Take out the polenta from the packets and trim the sides and cut into ½ inch size cubes.
• Place a large non-stick frying pan over medium-high heat and warm the olive oil well.
• Add the polenta cubes carefully and spread them on the pan as they pop while cooking.
• Cook till 1 side turns golden brown and the bottom turns crusty for about 5 to 7 minutes.
• Now slowly turn the croutons to cook the other side till it is brown for another 4 to 5 minutes.
