Even if you are not on a gluten freen diet you may like this carrot cake for it is really delicious to eat. In fact the beauty of this cake is that it is healthy for both people who are on a gluten free diet or not, and there is no butter in this recipe at all. Healthy and yummy!
All that you need is a food processor to grind the carrots, and then stir in all the ingredients together. Is that simple? Now check out and follow my steps.
For the carrot cake:
Carrots 350g
Pecans 1/2 cup
Eggs 5
Baking powder 1 teaspoon
Soda 1/2 teaspoon
Ground almonds 250g
Brown sugar 220g
Ground cinnamon 1 teaspoon
Ground nutmeg 1/4 teaspoon
Ground ginger 1 teaspoon
1.Preheat oven to 350F
2. Grind the carrots by a food processor and remove the remove the grated carrots from the bowl. Chop the pecans roughly.
3. Mix with all the remaining carrot cake ingredients<except the carrots and pecans>. At last add carrots and pecans and combine with the cake paste
4. Put the paste into the pan and bake for 15-25 minutes. Let cool utterly
For the cream cheese frosting:
Cream cheese 250g
Butter 50g
Icing sugar 100g
Lemon juice and peels half
5.Combine butter and cream cheese in a bowl, and beat with an electric mixer until smooth and creamy
6.Add icing sugar and lemon juice and peels, beat 5 minutes or until the color of the mixture turns into pale
7.Spread the frosting over the top of the cake
