MATCHA YELLOW PEACH ROLL CAKE

Matcha yellow peach roll cake

 

For the roll cake:
Egg yolks 4
Caster sugar 20g<add in egg yolks>
Egg whites 4
Caster sugar 40g<add in egg whites>
Low protein flour 40g
Matcha powder 8g
Butter 40g

1.Separate egg whites and egg yolks, add caster sugar in egg yolks and whip until sticky
2.Whip egg whites, add caster sugar per three times, whip until egg whites shape a triangle when lifting up the electric mixer
3.Add pinch of egg whites into the egg yolk paste, scrape well and pour them into the remaining egg whites, scrape quickly and mix well
4.Add sifted low protein flour and matcha powder, keep scraping and mingling
5.Heat butter with oven for 45 seconds, add pinch of paste into the butter, mix, and pour them into the remaining paste, scrape fast and mix well
6.Pour the paste into the ovenware which covers a baking paper, shake ovenware gently and let go of the extra air. Preheat oven to 360F and put it in the middle level, bake for 15 minutes

For the cream filling:
Fresh cream 250g
Caster sugar 30g
Yellow peach can a box

7.Add 30g caster sugar in fresh cream, whip until sticky and smooth with an electric mixer
8.Add yellow peaches and mix well

For the combination:
9.Wipe the cream filling onto the cake slice
10.Wrap the cake slice with baking paper, and put it into the freezer for refrigerating for half an hour, then cut into roll cakes
