When I was younger, during the Summer, my friends and I would ride our bikes to the local swimming pool. /u00a0We pretty much would have lived there if we could. /u00a0This pool was the coolest pool around. It had regular diving boards, it had high-dive diving boards and it had a HUGE water slide. /u00a0Every day on the way out, without fail, I would buy a stick of peppered beef jerky and a Skor candy bar from the front desk!! /u00a0I loved to eat all of the chocolate off the candy bar and then suck on the toffee part. I probably haven’t actually eaten a Skor bar for the last 10 years. So, I was pretty excited to try out this recipe./u00a0 I was really surprised with how EASY this toffee was to make. /u00a0I have heard horror stories of English Toffee, but I guess I got lucky, because mine turned out really good! /u00a0It really does remind me of a Skor bar and it is hard to stop eating it once you start! /u00a0 English Toffee adapted from:/u00a0here/u00a0and/u00a0here (Printable Recipe) 1 c. butter 1 c. sugar 3 Tbl. water 1/8 tsp. salt (omit if you use salted butter) 1 1/2 Tbl. light corn syrup 1 tsp. vanilla extract /u00a0/u00a0 3/4 c. chocolate chips chopped nuts, opt. Melt butter in a heavy-bottom sauce pan, over medium-low heat. /u00a0Add the sugar, water and salt; stir well to incorporate. M&M’s 3/4 c. mini marshmallows Preheat oven to 350 degrees. /u00a0In a medium bowl combine flour, salt and baking soda; set aside. /u00a0In the bowl of a stand mixer, beat shortening until smooth. /u00a0Beat in the peanut butter and both sugars and beat until light and fluffy. /u00a0Add egg, vanilla and milk and beat until smooth. /u00a0Slowly add dry ingredients. /u00a0Gently stir in M&M’s and marshmallows. /u00a0Place rounded tablespoons of cookie dough onto baking sheets lined with parchment paper. /u00a0Bake for 8-9 minutes (I baked mine 10-11 minutes). /u00a0Let cool for a few minutes before moving to a cooling rack. /u00a0 Jenn’s Notes: I didn’t use parchment paper and the oozing marshmallows stuck to the baking sheet, which was fine as long as I let them cool on the b. sheet before removing them. /u00a0They don’t flatten a whole lot during baking, so if you want a flatter cookie, make sure to press them down a bit before baking. /u00a0These are delicious and they stay chewy for several days. /u00a0I got 34 cookies out of the full batch. /u00a0”
