Confetti Soup


Ingredients:<serves for 6>

Canola oil 1 3/4 teaspoon
Raw diced carrots 3 2/3 oz
Raw chopped kale 4tablespoons +2 1/3 teaspoons
Chopped onions 3 2/3 oz
Chopped celery 3 2/3 oz
Black pepper 1/2 teaspoon
Water 3 /1/2 cu
Raw parsley 1 tablespoon+ 2/3 teaspoon
Fennel seed 1/4 teaspoon
Red pepper 1/6 teaspoon
Black-eyed peas 1 lb+ 2 oz
Turkey ham 6 oz
Salt 1/2 teaspoon


1.Take out a pot, heat the pot over medium-high heat
2.Add oil, chopped celery and chopped onions, cook until well incorporated
3.Add diced carrots, pepper, salt, fennel seed and red pepper
4.Cook about 2-3 minutes
5.Pour water and black-eyed peas in, cook for 25-30 minutes, until the peas are soft
6.Add turkey ham and kale, cook for extra 10 minutes until tender
