CHOOSE PECAN PIES TO BEAT CALORIES ON THANKSGIVING TABLE

This year the biggest day of caloric consumption and overeating arrives Thursday – Thanksgiving Day.

Thanksgiving brings family and friends together around a spread of food, there is no other festival like Thanksgiving Day when overeating is kindly permitted. We will face the challenges to resist the temptation of delicious food just in order to prevent ourselves from overweight. But, to some extent we enjoy the feeling of satisfying our stomach with turkeys, and that’s a paradox.

And it’s dangerous to expose yourself to a lot of comfort food. One quick way to reduce your Thanksgiving Day calorie intake is to get far way from the snacks and eat what you want to eat but do not overeat. And be sure to leave those unhealthy food alone which will not only gain you weight but also will damage your health. PECANS are just healthy enough for us to keep a good nutrition, eat more pecans would be beneficial for our brains. So let’s start to prepare HEALTHY pecan pies for Thanksgiving Day!

American Pecan Pie Recipe:

For the crust:

Ingredients:
500g flour, 380g unsalted butter, 10 ice cubes, 125ml water, 2 eggs

Method:
1. Cut unsalted butter into cubes and stir in flour
2. Add ice water and egg yolks and stir until there is no much dry flour
3. Do not add water too much
4. Package the dough with a plastic wrap and store in refrigerator
5. Remove it from the refrigerator after 1 hour

For the filling:

Ingredients:
1 1/4 cups pecans, coarsely chopped, 2 eggs, 1 cup light corn syrup, 1/4 cup brown sugar, 2 tablespoons melted butter, 2 tablespoons flour, 1/4 teaspoon salt, 1 teaspoon vanilla extract

Method:
1. Cut pecans into particles
2. Roll the dough into the pie pan and store in refrigerator
3. Roast pecans, add honey, brown sugar, egg and vanilla extract and stir
4. Pour it into the crust
5. Preheat oven to 356F and bake for 25-30 minutes

American Pecan Pie
Caramel Pecan Pie recipe:

For the crust: 125g low protein flour, 20g powdered sugar, 60g butter, 10g egg yolks, 30g water, 1g salt
For the caramel pecans: 120g pecans, 30g honey, 120g caster sugar, 80g water, 10g butter
For the topping: pinch powdered sugar

Method:
1. Mix low protein flour with powdered sugar, add softened butter
2. Rub flour and butter with your hands
3. Beat egg yolks and stir with water and salt
4. Slowly pour the egg wash into the butter/flour mixture, knead dough
5. Package the dough with a plastic wrap and press gently, store in fridge for 1 hour
6. Roll the dough into a large slice according to the size of the pie pan
7. Lay the slice on the pie pan, trim with your hands, cut extra slice
8. Poke holes on the bottom of the crust, loosen for 20 minutes
9. Cover the crust with a baking paper and put heavy stones on
10. Preheat oven to 338F, bake in the middle layer for approximately 20 minutes
11. Mix caster sugar, honey and water in a pot
12. Bring it to a boil with slow fire until big bubbles blow
13. Add in well-baked pecans and butter until the mixture in the pot turns into a light brown color
14. Top the mixture on the crust when it is hot, let cool and sift in pinch powdered sugar

Caramel Pecan Pie

Milky Flavor Pecan Pie Recipe:

Ingredients:
110g low protein flour, 1/2 cup fresh pecans, 1 egg, 1/2tablespoon milk, 10g caster sugar, 10g water, 1/2 cup brown sugar, 2 teaspoon white sugar, 1/2 teaspoon vanilla extract, pinch butter

Method:
1. Soften 40g butter in a pot, pour in 100g low protein flour and 10g caster sugar, rub them with your hands until even
2. Add water and knead dough. Loosen for 15 minutes on the chopping board
3. Roll the dough into a thin slice and cover the pie pan with it. Cut off extra edge
4. Beat egg with an egg beater until pale, add 1/4 cup melted butter
5. Stir in 1/2 cup brown sugar and 2 teaspoons white sugar
6. Whisk in 1/2 tablespoon flour, 1/2 tablespoon milk and 1/2 teaspoon vanilla extract
7. Put pecans in
8. Preheat oven to 356F, bake for 35 minutes until condensed with color golden and brown
