Potato is one of those foods that took me years to love. And potato becomes a staple in my home for my families love to eat too. I sometimes cook potatoes in different ways that I rack my brain to write the recipe and follow. This gluten free Parmesan garlic roasted potatoes are just my recent work for us who love to eat potatoes and might also need gluten free food in their daily meal.


Medium potatoes 2 or 3
Olive oil 2 T
Minced garlic cloves 3
Chopped fresh parsley 2 T
Fresh grated Parmesan cheese


1.Heat oven to 450F
2.In a large pot, fill in with water and bring to a boil
3.Chop the potatoes into cubes
4.Put in the potatoes into the hot water, cook for 3-6 minutes according to the size of the cubes
5.Brush olive oil in a rectangular heavy pan and heat in the oven
6.Drain the potatoes and place them back in the pot
7.Dry the potatoes by shaking them, in which way the potatoes would be crust in roasting
8.Put the potatoes into the pan with hot oil, toss them, and roast the potatoes
9.Until the potatoes are tender, add fresh garlic, salt, Parmesan cheese and pepper for taste
10.Keep roasting in the oven until the potatoes are crispy and soft on the surface
11.Fold in chopped parsley
