Gluten free butternut squash soup

Butternut squash 1
Water 3 cups
Olive oil 2 tablespoons
Diced celery 2 stalks
Sliced onion 1
Garlic 1 clove


1.Wash clean of the squash and peel carefully
2.Chop them into little cubes for biting. Cause the smaller the cubes, the faster it will cook. Make sure to remove the seeds and pulp
3.Put them into a medium pot with water. Bring to a light boil, and then turn into medium-low heat, cover the pot with a lid and simmer for 20-30 minutes, until the squash is very tender
4.Pour olive oil into a frying pan which is heated with medium heat, stir in onion and garlic and stir-fry 1 minute until you can smell the aromas
5.Add celery and 1 tablespoon of water to the pan. Cover with a lid and steam, while in the course of steaming, stirring some times, until celery and onions are soft, it needs about 2-3 minutes
6.After squash is well cooked, pour all the ingredients into a blender, including remaining water. Until the mixture is smooth and fine, if it is too thick, add extra water
7.Pour the squash mixture back into the pan, add other cooked vegetables
8.Add salt and pepper for seasoning
