Lately I have been thinking I really should post a feijoa recipe as they are/u00a0everywhere/u00a0in Auckland at the moment, and also I wanted to do an Anzac recipe update – but seriously there are a million fabulous biscuit recipes out there so I had the brain wave (!) to combine the two and make this Pear (or apple) and Feijoa Crumble with oaty, coconut topping. The pears and feijoas work beautifully together, the whole thing is quick and easy to make and has a delicious, nostalgic, comforting vibe. I/u00a0remember eating crumble as a girl and always hoping for maximum crumble, minimum/u00a0fruit – these days I am happy with a good serving of fragrant fruit, but there is still a generous amount of golden crunch on top! 5 Granny Smith apples or Pears, peeled, cored and cut into 2-3cm chunks 2 tbsp water 2 tbsp golden syrup 11/2 cups roughly chopped feijoa flesh (about 11-12) Anzac Crumble: 150g butter 2 tbsp golden syrup 1 cup oats 1 cup desiccated/u00a0coconut 1/2 cup plain flour 3/4 cup brown or muscovado sugar To serve: softly whipped cream or vanilla bean ice cream Put apples or pears and feijoas, water and golden syrup in a large pot and cook over a medium heat for 8-12 minutes until they are are just soft. Cool in the remaining liquid. Melt butter with golden syrup in a large pot, or in a large bowl in the microwave. Add all remaining ingredients and stir with a wooden spoon until combined. Pre heat oven to 170/u02daC (340/u02daF). Put pears or apples and feijoas in a baking dish approximately 16cm x 28cm. Load on the crumble topping, which should clump together to make nice big crunchy bits when cooked. Bake for 25-30 minutes or until golden. Serves 6-8. If making this recipe with pears and feijoas, make sure they are just ripe when using, rock hard and they won’t soften up enough. Depending on whether they are almost ripe or really ripe keep an eye on the initial pot-cooking time, as you may not need quite as long :)”

Last night we dropped him at the airport armed with two daisy plants grown from cuttings in our garden here. I love that he has taken them to plant at his flat as it is a daisy that I have taken with me (via cuttings) from our last three houses, since he was born almost 20 years ago. Nice. Anyway, enough about daisies – finally a recipe that suits the balmy south and the arctic north at the same time!!! Today may I present/u00a0 a salted caramel peanut sauce that is super easy to make, bloody delicious, and perfect slathered either hot or cold over vanilla ice cream. For grown-ups, feel free to add a a glug of bourbon to the sauce, and for the chillies (kids), omit the bourbon and add sliced banana to the ice cream for a caramel, peanut sundae…hmm might actually be quite nice for the adults too! This is another of my recipes developed and photographed for the good folk at Fairfax, and one which I will be making over and over. PS – if you don’t like peanuts, just leave them out!!! 🙂 /u00a01 1/2 cups caster sugar 4 tbsp water 300ml cream 2 tablespoons butter 1/3 cup roasted peanuts, chopped /u00bc teaspoon salt Heat caster sugar and water together in a large, clean, heavy based pan over a medium/high heat until the mixture has/u00a0crystallized, then turned a light golden/u00a0amber colour /u2013 this will take around 3-6 minutes depending on how high the heat is. While it is cooking microwave cream for about 1 minute or so until hot. As soon as the sugar is light golden take it off the heat and immediately whisk in cream, about 1/4 cup at a time – it will froth up madly, but just whisk hard and keep adding in small amounts until it is all incorporated. Add butter, salt and nuts and whisk to combine. Cool a little before pouring into a sealable container and storing in the fridge. Young and struggling at the time, my husband and I were so excited, and shared one of the double tickets with my sister and brother-in-law. The mystery location turned out to be Wellington, and the weekend was freezing cold and rainy, but we had a blast. Thirty years later I still remember coming in from the blustery cold, to a little cafe in the city and eating the most delicious apple croissant cake. This probably tastes nothing like the cake of my memory, but the combination of croissants, apples and blackberries cooked in a mellow custard is absolutely/u00a0beautiful. This cake can be eaten warm with vanilla bean icecream or at room temperature with some whipped cream. Yum. If you’d like to stay in touch – tell me what kind of recipes you’d like to try, or keep updated with what I’m doing, ‘like’ my Facebook page here: /u00a0http://www.facebook.com/FromTheKitchenNZ – hope to see you there!/u00a0 3 apples, peeled, cored and each cut into 12 wedges 1/3 cup water 1 tbsp caster sugar 5 good quality croissants, halved 2 cups fresh blackberries or boysenberries 4 eggs plus 2 egg yolks 3/4 cup whole milk 1 cup cream 1 1/4 cups caster sugar 3/4 cup ground almonds 1 tsp cinnamon or 1/2 tsp almond essence 1/3 cup flaked almonds 1 tbsp caster sugar Preheat oven to 160/u02daC (325/u02daF) and line the base and sides of a 23cm spring form cake tin. Heat water and sugar in a large frypan over a medium heat and cook apple wedges until the water has absorbed and the apples are tender. Take off the heat and leave to cool. In a big jug, beat eggs, yolks, sugar, milk and cream until pale. In a separate bowl mix ground almonds with cinnamon (or add almond essence to cream). Layer a couple of croissants into the prepared tin, covering the base fully. Sprinkle over half the blackberries, apples and almond mix. Layer up with the remaining croissants, apples, blackberries and almonds – and now you can tear the croissants as you wish. Press down gently. Pour the cream, sugar and egg mixture over the croissants, coating everything fully. Leave to stand for an hour. Sprinkle with flaked almonds and sugar and bake for 45 minutes. The custard might puff up a little in the oven, then sink when you remove it – this is fine, it will set into a delicious creamy mix with the croissants. Leave to cool for at least half an hour before serving with whipped cream and/or vanilla bean ice cream. Serves 8 – 10.”
